Ingredients
- 1 Tbsp and 2 tsp. olive oil
- 8 pieces pre-cooked shrimp
- 3 cloves garlic, minced
- 10 spears of asparagus, trimmed and cut into 1.5 inch pieces
- 1/4 cup feta
- 1 tsp. lemon juice (or juice from 1 lemon wedge)
- Salt and pepper to season
Instructions
- For the asparagus: In one skillet, heat 1 Tbsp. olive oil over medium-high heat. Trim the ends off the asparagus and cut into 1.5 inch pieces. Sauté for 8 minutes, stirring frequently. For the last minute, add in 2 cloves of minced garlic. Remove from heat.
- For the shrimp: In another skillet, heat 2 tsp. olive oil over medium heat. Add shrimp and sauté for 3-4 minutes per side. In the final minute, add 1 clove of minced garlic. Remove from heat.
- Assemble the salad: Combine shrimp and asparagus in a bowl. Add feta cheese. Drizzle lemon juice over the top. Grind some salt and pepper over the bowl. Toss together and enjoy!
