Chipotle Turkey Burgers

I am so excited to be sharing this recipe for chipotle turkey burgers! It has been on my list for a long time to post, but since it is such a quick and easy meal, I kept making these late in the evenings after I got home from school. Late night turkey burgers photographed under artificial light are not the prettiest sight…I finally made these chipotle turkey burgers in the daylight yesterday evening, which means I am writing the post first thing this morning!

I have made at least five or six batches of these chipotle turkey burgers in the past couple of months. They are a wonderful thing to meal prep and have in the fridge for lunches or dinners. Surprisingly, last night was actually the first time I had one on an actual burger bun. For lunches, I would throw a turkey burger in a tupperware with sweet potato fries and some vegetables on the side (like steamed broccoli or sautéed asparagus). For dinner, one of my favorite things is to put a turkey burger patty on top of a bed of spinach or kale for a hearty salad.

Let’s talk about chipotle peppers in adobo sauce for a minute. This stuff is amazing. This recipe calls for one or two diced peppers and a teaspoon or two of the adobo sauce, but the can comes with many more peppers. So what to do with the rest? I like to dump the rest of the can into a food processor and blend the peppers in with the sauce to form a paste. Then scrape the paste into a tupperware and freeze it. This way, you can cut out a section of the paste each time a recipe calls for chipotle peppers in adobo sauce (or each time you want to add a little smokiness and spice to your dish). You can find it near the canned beans in some grocery stores, or in the Hispanic food section. I use chipotle peppers in these chipotle turkey burgers, chili, and red beans & rice. My favorite sauce is to take about one teaspoon of the frozen paste + one tablespoon of plain greek yogurt + a splash of almond milk to make a creamy chipotle dressing. Perfect dressing for the spinach salad with a turkey burger on top!

Chipotle Turkey Burgers
Serves 6
A smoky, slightly spicy turkey burger that is delicious in a bun, on a salad, or on its own!

Ingredients
  1. 1.25 lbs ground turkey
  2. 1/4 of a medium onion, diced
  3. 3 cloves of garlic, minced
  4. 1 Tbsp. cilantro, chopped (optional)
  5. 1-2 chipotle peppers in adobo sauce, finely chopped (or 1 Tbsp. frozen chipotle pepper paste)
  6. 1/4 tsp. salt
  7. 1/4 tsp. pepper
Instructions
  1. Heat a lightly oiled skillet (preferably cast iron) over medium-high heat.
  2. Mix all ingredients together in a medium bowl with the ground turkey until well combined.
  3. Divide mixture into 6 balls and press flat into patties - about the size of your palm and 1/2 inch thick.
  4. Cook for 5-6 minutes on each side until cooked through. Cut the thickest patty in half to make sure it is no longer pink on the inside.
Notes
  1. For a chipotle sauce to drizzle on top of the turkey burger patties, combine 1 Tbsp. greek yogurt with 1 tsp. minced chipotle pepper and a little adobo sauce and a splash of milk of your choice.
